Hello boys. Because Statistics Full History On disappeared or has not disappeared and is this option hidden? If so, where can I find it or what would be an alternative to this? Thanks for your support.

Release notes tell us what tools and features are new or deprecated. I think the feature "Statistic Full History On" is gone. It wasn't replaced by a similar feature. Perhaps you can reconstruct the data out of the event log. But I am not sure if you can identify each single item in its flow through the model easily.
As an alternative you can try to track the value change of nodes in the itemtype branch of the item attributes tree and get the data you need.
"Full History On" was a feature used by the FlexSim Chart application.
FlexSim Chart was removed in FlexSim 7.1 when we added the Dashboards feature to FlexSim. From the Release Notes:
- Removed FlexSim Chart and save full history.
The "Full History On" option enabled the FlexSim Chart application to create charts involving flowitems, such as gantt charts. You can do that in FlexSim now by simply dragging the desired chart (such as Item Trace Gantt) into a dashboard. You no longer have to explicitly enable it through a menu option.
