Hi, I have 3 sources that I want to activate with bottoms. Bottom number 1 has to be low demand, and one source must be activated. Bottom 2 is medium demand and two sources hast to be activated. Lastly, bottom number 3 named high demand has to activate 3 sources.

You can call methods stop or resume. But you would be responsible to count how often you have called stop.
Another approach would be to redirect the output of each source by a label value to a sink for example at output port two and your standard production at output port one. Your dashboard buttons will set label values accordingly in your three sources to get desired result.
