There are two main options to vary the number of processors.
One would be to either use the "Delete and Copy Group Members" option in the On Set trigger of a parameter. This will remove/add objects from/to the reference group until the given number of objects is reached.
If the location of the processors is important, it might be better to keep all processors in the model at all times and use a parameter to "deactivate" them by closing their input in the reset trigger or simply not sending any items to them.
To measure the output, use a performance measure that tracks the total output of a group of objects.
