Essentially you can go into the tree under model > Tools > ModelUnits, and go in and change the names and values of the model units from there. BUT you need to remember that this will not update any of the values in your model. Size of processors, travel speeds, etc will all show the same numeric value as before. (For example, if your operator were 72 inches tall, they would now read as 72mm tall.) So you'll need to determine if it's easier to go in and change all of those units manually, or if it's easier to start a new project with the correct units from the outset.
