It is great that you're getting started in FlexSim!
The FlexSim version you indicated, 7.5.4, has reached its end of life, and is no longer supported. Are you using an old license for that version? You may consider downloading our latest version, currently 21.0.3, from your FlexSim Account. Since version 7.5 there have been significant changes to the way FlexSim works. It would be a shame to learn on the old version, then upgrade and find that now FlexSim is quite different.

FlexSim's interface has changed a bit since that 2020 video series, but you should be able to make the mental leap to the 2021 version.
Finally, I also highly recommend Dr. Allen Greenwood’s FlexSim Primer, which was written specifically for students and professors learning FlexSim.
In regards to your question about journals, several resources include Computers and Industrial Engineering (https://www.journals.elsevier.com/computers-and-industrial-engineering), the proceedings of IISE conferences, and the proceedings of IEEE conferences. I've also seen manufacturing projects involving simulation appear in the International Journal of Engineering, Science and Technology (https://www.ajol.info/index.php/ijest).
I highly recommend doing a search on Google Scholar to explore and discover other journals.
