How can I create a Zone Partition Statistics chart that shows Output per hour?
I can only see the option for total Output.

After setting up the every other setting for the chart, install its components (under Advanced). This will replace the chart with a default chart template, which is why all settings should be done beforehand. Afterwards all adjustments will have to be made in the Statistics Collector directly.
Then just add a division by the current amount of hours to the "Current" column.
"Model.time/hours(1)" will return the elapsed hours regardless of chosen model unit.
