Generally you would set up a source that creates a specific quantity of items right when the model starts and send those directly to the racks.
You can also achieve this in a Process Flow.
The attached model demonstrates both methods.
Restocking would likely be easiest through a Process Flow as well by reacting to an item exiting a rack in an Event-Triggered Source and then creating a new item by copying the labels of the exiting item.
