What I want is to give sink output to items stored in racks. I want to be able to do this on any day of the week with the item references I want and quantity.
For a better understanding, for example, a client with item reference X has 100 pallets stored in racks and every monday and wednesday I want to give sink output to 40 pallets.
How can I do it?

You can use the same approach that is described in this post. Specifically, the first option I present in my comment would be well suited. By pushing the stored items to a list, you can use a query in the Pull from List activity to determine what type of items to release.
