In FS 2017 there is a section in the dashboards under the "General" section that has options for visualizing the behavior of a tracked variable. 2018 does not appear to have that option.

In FS2018 the concept of Statistics Collectors was developed a bit further and the old charts have been deprecated. You can still enable them if you go to the File menu, Global Preferences and on the Environment tab select "Display Legacy Charts in Library".
The newer way to do it, is to create a Statistics Collector for the Tracked Variable, then base your chart on that. I have attached a demo model here: trackedvariablestatscollector.fsm.
