Initialize simulation at full process

Hi all, this is my first post in the forum, hope you can help me.

I have a question about the simulation start time, can I start the simulation in a specific time with my process full? I mean, I want that my simulation starts 1 week later than the simulation start time configured in the software, because at now I need to run the simulation, put at full speed, stop it at the time needed and then I make my analisis, but I want to run my simulation at the time I need and dont wait to much, because sometimes I pass the time that I need and its frustrating start over new.

I attach a picture of how I want to see the simulation when I push the play button.

The quickest and easiest way to do this is the stop time tool. Please see the attached .gif.
