Compared to in FlexSim ver. 2020 where the number of objects in a group could be tested in the Experimenter by simply adding a variable and selecting 'Number of Objects in Group', how would I do this in ver. 2021 with the parameters table? Furthermore, there is only an On Set function of setting objects in a People group but not for other objects.

You just create a new parameter of type Discrete and sample the Group in the Toolbox. Then select "Delete and Copy Group Members" as the On Set picklist option, and rename the parameter.
From there you can add that to the set of experiment parameters and type in the number you want for each scenario.
