Is there a simple way to assign a label using "Assign Labels" or "Custom Code," where each incoming token is given a sequential number? For instance, the first token receives No. 1, the second token No. 2, and so forth.

You can (for example) use a global variable that you increment, or the stats of the activity from which the token is exiting.
