In my model I don´t have a source to be able to do the staytime between the source and the sink, so I don´t know how I can obtain the staytime of my orders from when the operator picks them up untill they leave the line.
You can use a zone in order to find the staytime statistics. I modified your model so that after the boxes are picked up, the token enters a zone called Zone: Processing. When they are dropped off at the queue, they leave the zone. I pinned the staytime statistic from the zone to a dashboard so you could see the stats. The average staytime ended up being about 31 seconds.
