How do I calculate the throughput using a photo eye?

The photo eye only gives me the number of totes that passed through it. However, the time elapsed does not give me an accurate through put because it is possible that no tote went past the photo eye the first few minutes and then it started to flow continuously.

Without having to manually divide the number of totes that passed through the photo eye by the displayed time, how can I directly get the rate of tote transfer through a point.

There is an option in the Quick Properties Statistics for the Photo Eye to pin the Output vs. Time on a dashboard, which is what it sounds like you're looking for.
