Use the Pin button on the Global Variables window:

If the value is not displaying correctly in the version of FlexSim you are using, follow the instructions in my previous answer to this same question.

For Graphs you're going to want to use a Tracked Variable. Tracked variables will keep track of historical values which are necessary for graphing purposes. Having said that, you can display the Value of a Global Variable on your dashboard, if you just want it displayed as text.
