How do create 5 different flow items each with a different item type and different colors in one queue
You can use the Source's On Creation trigger or the Queue's On Entry trigger to set Type labels and colors. Or you could schedule item arrivals with a certain Type labels and set the color according to the label.
You could also do this with Process Flow using the Assign labels activity to set label values on the item and the Change Visual activity to change the item's color.
