I am trying to pull some elements from a List (in process flow). I don't know how to set the labels of the tokens to create priorities from the different Pull from List objects. Do you know how to create priorities?

Do you have an example process you are working on we can use for reference? Typically when you use "priorities" on a list that means that some entries on the list need to be considered higher priority than others. This usually means that a Label on the entry (Or Field) needs to be set up before it is pushed that has a value that can be treated as a priority. This can be accomplished with as Assign Labels activity.
You could also "prioritize" backorders on the list by using a backorder queue strategy for the things acting as pullers on your list, also by using Labels on the backorder entity.
The specifics of how to implement these piorities depends on what you are trying to do.
