I would like to be able to turn on or off individual connections as a parameter while running the model in experimenter. Is there a variable that controls that?

You must be a bit more precise, what connection do you want to disable. If they are the material flow connections, then you can set the ports the items are sent to by labels. Another approach needs additional queues at the input or outputs of objects. Depending on label values you are stoping or resuming the input of the queues. Then you can still use the template picklist option of the Send To Port flow function like: first available, round robin if available and other enhanced items containing the description "if available".
