Hello, I want to know which dashboard I can use in this simulation to analyze the number of products that you deliver and in what times you do it. additionally I want that every time I process an element it changes color

Regarding your first question: "wich dasboard I can use in this simulation to analyze the number of products that you deliver", you could use a Content graphic if you reference the last object where the products are delivered or an Output graphic, if you reference the Processors objects, assuming after the products are processed are considered as delivered.
Your second question: "in what times you do it" could be answered creating a Statistics Collector. If you do not know how to use these tool, you could follow this tutorial.
Finally, if you want to change the color of the products after they are processed, I suggest you to follow this video.
