why is it that in the attached model everything works with an AGV Capacity of 1, when I increase it to 2 the TaskExecuter comes to a stop after completing two deliveries.

The AGV Process Flow Template works like this:
If the AGV reaches its maximum load capacity, it will directly travel to the (first) dropoff location. If the variable UnloadToEmpty is set to 1, it will continue to directly drop off items until it is empty again. If not or, crucially in this case, it loaded fewer items than its max. capacity, it will continue to travel on the NextWorkLoop and only unload items if it coincidentally drives past an unload location.
In your model, the pickup point doesn't have a NextWork connection, so the AGV-token is stuck trying to find the next control point to travel to.
