How can I change the separator process time in the experiment variable?
You do it indirectly since the process time variable is a code node. Set up the process time to read from a label value and then use the experimenter to change the label value like in this question. Or have the process time read from a global table and update the global table in the experimenter.

That variable determines how the separator draws items. It's changed through the object's UI using the Convey Items Across Length check box.
When checked, the item moves across the top of the separator, but stays still if not.
It's not really a very useful thing to change in an experimenter. It shouldn't really have any effect on the model results since it's mostly just a visual thing.
