I would like to ask for your help to figure it out, how can I collect the time that the Floor Storage "Estoque_MP" was empty and create a Graph for it.

I'm not quite sure what kind of graph or what numbers exactly you want to graph. The total time empty is a single value, not sure what to graph.
Attached is your model with the way I would keep track of the total time the rack (floor storage) is empty. I added three labels on the rack to keep track of the time the rack became empty until the time another flowitem comes in and the total time that the rack has been empty. I display that on the dashboard but again, not sure what graph you are looking for.
Take a look at the model and see if something like this would work for you.
